Chocolate Avocado Mousse

075Not only is this recipe super tasty but its is packed with nutrient-dense foods. Avocados contain 15 grams of healthy fats, which is necessary for optimal brain function and to keep inflammation at bay.  They are loaded with fiber (not carbs), have more potassium than bananas and have a high vitamin content.  Raw cacao is considered a superfood.  It is packed with phytonutrients, is super high in magnesium for a healthy heart and brain, it has 40 times the antioxidants as blueberries, its the highest plant-based source of iron and is a natural mood elevator.  Coconut milk is highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous.

Ingredients (all organic of course)
1 Large, ripe avocado
1/4 cup of raw cacao powder
2-3 large dates
1/3 cup coconut milk
1 tsp vanilla or 1/2 tsp vanilla bean powder
Dash of sea salt

Soak the dates in the coconut milk for 30 minutes. Be sure to remove the pits prior.
Use a food processor or high speed blender to blend all the ingredients until smooth.

Refrigerate at least 30 minutes prior to serving.

Substitute 2 TSBP of honey for the dates or for a completely sugar-free versian, use 1/4 cup on non-GMO erythritol and a few drops of liquid stevia to taste.
